In early September, the hot summer has brought out a high concentration of sugar in the grapes. Harvest time then takes place and as in every year the careful selection of grapes, coming from the best land within the area, will ensure the high quality level of our wines.
At the optimal moment, we proceed to the harvest of selected grapes. Special care is taken in the transport of bunches to the Lagar (pressing house) where they are immediately crushed in order to extract the new must (grape juice). Carried in small amounts, the grapes arrive healthy and quickly to the wine-press. This way any breakages in the grape skin and juice lose, that would mean oxidation and uncontrolled fermentation, are avoided. Most of the grapes are still picked by hand. New vines are cultivated using wire nets, which allow the mechanisation of the harvest.
